  3. 3 tbsps Short Grain Rice (sticky rice variety)
  4. 1 kaffir lime leaf
  5. 2.5 tbsps Fish Sauce
  6. 1 tbsp Lime juice
  7. Handful Sawtooth Coriander or Cilantro Chopped
  8. Handful Chopped Green Onion
  9. 1 small Onion Chopped
  10. To Serve
  11. as needed Green Onion or Garlic Chives
  12. as per need Lettuce
  13. as required Mint
  14. 1 Thai Fresh Chilli chopped

Steps to make Laab Gai (Thai Chicken Salad)

  1. Dry Roast the dried whole chilli and powder it in mortar and pestle or mixer grinder or grinding stone. Its spicy so used only half of it for 200 gms Chicken. Dry roast the rice (I have used Ambemohar rice here) with 1 khaffir lime leaf, cool a bit and then powder it in mortar pestle or mixer grinder. Mince the boneless chicken.
  2. Take about 1/4 cup water in a kadai or wok or wide pan, once it boils, add the mince chicken, add 1/2 tbsp of fish sauce too and cook till the water dries off. Add the lime juice and fish sauce and mix. Switch off the flame. Add the chopped onion and mix, the onion will wilt with the heat of the chicken.
  3. Add in the 2-3 tbsps of powdered rice too and mix, then add the roasted chilli powder as per taste, I used half only. Add green onion and Cilantro and mix well. Serve it immediately with some lettuce and green onion or garlic Chives and garnish with Mint leaves. It goes well with sticky steamed rice and Green Papaya Salad/ You can wrap it in lettuce leaf and have it too.
